Ammonium Glycyrrhizinate is extracted from the root of licorice which has an intense sweet taste. It has ant-inflammatory and antimicrobial properties. It is extensively used as a sweetener as well as a flavor enhancer in desserts, dairy and baked products, beverages. As it is a low calorie sweetener, it is of great use to patients suffering from diabetes, hypertension, and heart diseases. Due to its antibacterial and anti-oxidation effect, it is also used in cosmetics to inhibit melanin formation.
